Viral Mint

Our little mint patch was posted on the St. Louis Reddit site (which I’m not on) and drove a whole lot of people to the blog.

It started with a question: “Anyone know the backstory of this? The QR code doesn’t work. Carondelet on an unmarked building“. Someone figured out the correct site and posted a link to the blog.


I need to pull out that bind weed! And I guess we need to fix the QR Code on the sign.

Here’s the link to the post. Over the past three days, we’ve had over 600 people visit the blog and viewing over 1800 posts. We’ve never seen that many visitors in just 3 days! This site seems to be a forum for users to comment on the original post. So in honor of the person that posted “I am totally making that recipe for Lemon & Ginger Marinated Chickpeas“, here’s another favorite recipe that uses a lot of mint and some of the stockpile of lentils we bought at the beginning of the lock down. It is a good ‘clean out the veggie bin’ recipe.

Lentil Salad

Salad ingredients:

  • 1 cup lentils, rinsed, cooked per package, tender, not soggy, cool in fridge or rinse in cold water
  • 1 cucumber, peeled and diced- we like the English ones, fewer seeds
  • 1/2 red onion or 2 shallots or 4 green onions or combination, diced
  • 3/4 cup chopped fresh mint leaves -lots o-mint! help yourself to our patch by the alley- byo scissors, or you can pull up some plants for your own garden. It doesn’t need good soil, but- fair warning- it can be very invasive. Of course, wash it well before using.
  • Other options- red peppers, olives, frozen peas or corn, any dense veggie

Dressing: put everything in a lidded jar, shake to combine, dump on salad, toss. Taste, adjust as you like.

  • 3-4 tablespoons olive oil
  • 2 lemons juiced- can add lemon zest for an extra kick- zest before juicing
  • 1-2 teaspoons Dijon mustard
  • 2 cloves of garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon pepper

Keeps in the fridge about 4-5 days. The mint will turn dark (oxidize) but it is still good to eat.

    Too bad I don’t like fresh mint. I know where I could get a lifetime supply! 😄
